Cuisine: Persian. Cooking time: 15 minutes. Serves 2-4
Ingredients
- 1 can chickpeas or white butterbeans
- 1/3 cup Tahini
- Juice from ½ a lemon
- 1 onion chopped and cooked
- 2-3 cloves garlic smashed and cooked
- 3 Tbsp olive oil
- 2 tsp Baharat spice blend
- Paprika for garnish
- Parsley sprig for garnish
Instructions
- Rinse chickpeas/beans well.
- Put 1 Tbsp olive oil in pan and sauté onions and garlic. Don’t burn!
- Add the Baharat and cook for another 20 seconds. Add a little water if it becomes dry.
- Rinse chickpeas well. In a food processor add all the ingredients except the paprika. Blend until smooth.
- Season accordingly with salt and pepper. If you would like thinner consistency, add a little water.
- Tip into bowl; give it a swirl of olive oil and a dusting of paprika. Finish with parsley garnish. Serve with flatbread.
