  • 1 tbsp vegetable oil
  • 1 brown onions, halved, thinly sliced
  • 2 tsp brown mustard seeds
  • 8 cups raw baby spinach
  • 1 Tbsp toasted pine nuts
  • Salt & freshly ground black pepper

Instructions

  • Heat the oil in a large frying pan over medium heat. Add the onion and cook, stirring occasionally, for 8 minutes or until golden brown and crisp.
  • Add the mustard seeds and cook, stirring, for 2 minutes or until seeds begin to pop.
  • Add the spinach and cook, stirring, for 3 minutes or until the spinach just wilts.
  • Taste and season with salt and pepper.
  • Add in the pine nuts.
  • Transfer to a serving bowl and serve immediately.
