Spinach with brown mustard seeds – Serves 4
- 1 tbsp vegetable oil
- 1 brown onions, halved, thinly sliced
- 2 tsp brown mustard seeds
- 8 cups raw baby spinach
- 1 Tbsp toasted pine nuts
- Salt & freshly ground black pepper
Instructions
- Heat the oil in a large frying pan over medium heat. Add the onion and cook, stirring occasionally, for 8 minutes or until golden brown and crisp.
- Add the mustard seeds and cook, stirring, for 2 minutes or until seeds begin to pop.
- Add the spinach and cook, stirring, for 3 minutes or until the spinach just wilts.
- Taste and season with salt and pepper.
- Add in the pine nuts.
- Transfer to a serving bowl and serve immediately.
